Which are correct:

1) I am in no rush to see him. You wouldn't believe how much I am not in a rush to see him.

2) I am in no rush to see him. You wouldn't believe how little of a rush I am in to see him.

3) You won't believe how much I am not interested to hear what you have to say.

4) You won't believe how little I am interested to hear what you have to say.

They are all okay.

They are all tongue-in-cheek.

They are all slightly humorous, because they are somewhat similar to garden-path sentences, as we generally expect a positive expression after "you wouldn't believe how ...". The construction with the actual negative (... how much I am not ...) is far more surprising in this regard, and therefore more effective.
