That's a mandoline...an absolutely terrifying gadget! Everything goes along fine...until it doesn't!

I had to use one when I worked as a prep-cook. It didn't have a guard...you just used the palm of your hand to slide the food across the blades. Thankfully, no one had to taste my blood but they may have tasted a few drops of my sweat. That thing gave me nightmares!

I nearly took the tip of my finger off with mine - dangerous things. But so good at making thin slices. I need a new mandoline - my old (expensive!) one started to fall apart.

Box graters often incorporate a blade that enables the utensil to function like a mandoline.
